Ingredients:
- 4 cups green tomatoes, chopped
- 2 cups onions, chopped
- 2 cups green cabbage, finely shredded
- 1 ½ cups green bell peppers, chopped
- 1 ½ cups red bell peppers, chopped
- 2 cups white vinegar
- 1 ½ cups sugar
- 1 tbsp mustard seeds
- 1 tbsp celery seeds
- 1 tbsp salt
- 1 tsp turmeric
- ½ tsp ground ginger
- ½ tsp black pepper
Instructions:
Prepare the Vegetables: Begin by chopping the green tomatoes, onions, green bell peppers, red bell peppers, and finely shredding the cabbage. Mix them together in a large bowl.
Salt the Vegetables: Add salt to the mixed vegetables and stir well. Cover and let it sit for 4 hours to draw out excess moisture. After the time has passed, drain off the liquid and press the vegetables to remove any remaining moisture.
Cook the Relish: In a large pot, combine vinegar, sugar, mustard seeds, celery seeds, turmeric, ground ginger, and black pepper. Bring to a boil, stirring until the sugar has dissolved.
Add the Vegetables: Add the drained vegetable mix to the pot. Simmer over low heat for about 30-45 minutes, stirring occasionally, until the vegetables soften and the flavors meld together.
Cool and Store: Once cooked, let the chow chow cool. Transfer it to sterilized jars for canning or store it in an airtight container. Refrigerate and let it sit for at least 24 hours to enhance the flavors.
