Grilled Chicken Salad

Juicy grilled chicken over fresh greens for a light, protein-packed salad!

Ingredients:

  • 1 boneless, skinless chicken breast
  • 2 cups mixed salad greens
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions:

Season the chicken breast with salt and pepper on both sides.

Heat a grill pan over medium heat, drizzle a little olive oil, and cook the chicken breast for about 5-6 minutes on each side until fully cooked.

Remove from the grill and let it rest for a few minutes, then slice thinly.

In a large bowl, add mixed greens, cherry tomatoes, cucumber slices, and red onion.

Top the salad with the grilled chicken slices.

Drizzle with olive oil and balsamic vinegar before serving.
