  • 1 1/2 cups (300g) granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups (360ml) vegetable oil
  • 1 cup (240ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons (30ml) red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar

For the Cream Cheese Frosting:

  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two round cake pans or line them with parchment paper.

2. Prepare the Dry Ingredients:

  • In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. Set aside.

3. Mix the Wet Ingredients:

  • In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.

4. Combine the Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the batter.

5. Bake the Cakes:

  • Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.

6. Prepare the Cream Cheese Frosting:

  • In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Stir in the vanilla extract until fully combined.

7. Assemble the Cake:

  • Place one cake layer on a serving plate or cake stand. Spread a generous layer of cream cheese frosting over the top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

8. Decorate and Serve:

  • Decorate the cake with fresh berries beautifully arranged on the surface, and drizzle with melted white chocolate gently poured over the berries and cake. Slice the cake, serve, and enjoy your delicious and beautiful Red Velvet Cake!
