Ingredients (Serves 2):
- ⅓ kg small, waxy potatoes (such as Linda)
- Salt
- 1⅓ tbsp olive oil
- 16⅔ ml lemon juice
- ⅓ tbsp Harissa (North African spice paste)
- ⅓ tsp sweet paprika powder
- ⅓ tsp ground cumin
- 1 garlic clove
- ⅓ bunch fresh cilantro (about 15 sprigs)
Preparation:
Boil the Potatoes: In a large pot of salted water, boil the potatoes for about 20 minutes.
Prepare the Marinade: While the potatoes are boiling, whisk together olive oil, lemon juice, Harissa, paprika, cumin, and 1 teaspoon of salt. Press the garlic clove and add it to the marinade.
Coat the Potatoes: Drain and peel the boiled potatoes, then toss them in the Harissa marinade until well coated.
